My Favorite Steak
One of the questions I get asked over and over is "What is your favorite steak?" I guess it has something to do with the hand-cut steaks we serve at Bubba's or it could be because of the all of the different types of steaks on the menu. Either way it is a very common question. However there is not an easy answer to it. Don't get me wrong I do have a favorite but there are many things that have to be taken into account to answer this all important question.
First and foremost, I always say that the true flavor of a steak comes from the fat content of the steak. Now these days this is not a very popular answer, but it is true. The Ribeye steak tends to have the highest fat content of all the steaks and this is what gives it great flavor. While the Filet Mignon, on the other hand has the least. In order to make up for this lack of fat many restaurants, including Bubba's, wrap the Filet in Bacon to give some fat (flavor) to this very tender steak. In between these two steaks are the New York Strip, which has a thin fat covering across the top and the Sirloin steak which has small amount of fat. Both of these are great steaks and very popular in part because of the flavor created by the fat content.
Second, my choice of steak also tends to reflect my mood. A Ribeye steak to me is comfort food and cooked right (for me this means medium-rare with a crispy exterior) also puts me in a good place. A New York Strip, Sirloin or Filet will have the same effect but the Ribeye is the sure thing.
And finally the other factor in my steak selection is basic and boring. The size of the steak. The Filets tend to be some the smaller steaks on the menu, which is driven by the cost per pound. As the Filet is usually the most expensive meat a restaurant uses the portions tend to be smaller to get the right price point. Not to sound all technical, but that's why. So what does this mean? If I'm hungry I'll bypass the Filet and go for a larger steak, no fault of the Filet.
So after all this thought and reflection what the answer to the question "What's your favorite steak?"
